It means the author of that line has never looked carefully at dancers. The straight-legged dancer is so unusual that there is no term for it, while the term for knock-kneed is "jarreté" and the term for bow-legged is "arqué". These terms refer to the structure of the long bones of the leg. In the former situation, the knees meet, possibly forcing the feet apart when one stands in first position with no turnout. In the latter situation, the knees don't meet at all in first neutral.
